Well my lovely husband’s chicken puff pie….he’s such a good cook:

What you’ll need:

600grams Chicken Breast

400grams of button mushrooms

150 ml cream

2 heaped tbls Flour

1 Chicken stock cube

100 grams Butter

1 onion

Egg wash for the top

Salt and pepper

Fresh Thyme

Bought puff pastry (naughty I know)

What you need to do:

Chop the chicken into 1 inch cubes and the brown chicken off in the pan in batches, then put to one side.

Dice your onion, add the chopped leaks and fry until the onion is soft and golden.

Add 100 grams of butter, halved button mushrooms and the flour.

Stir, in the cream and chicken.

Finally add the chicken stock

Simmer for 45 minutes and allow to cool.

Pre heat the over to 180 degrees

Add mix into the bowl, cover with the puff pastry.

Use egg wash to brush to top of the pastry.

Pop in the oven for 40mins or until golden.
