The Best Soup Ever – made by Mr VP.

This is such a lovely meal, because its filling, really really tasty, and healthy.

WHAT YOU NEED:

1 Large Butternut Squash

1 Large Onion

Vegetable Stock (stock cube)

Salt and Pepper

Cinnamon

Pouring Cream

Fresh parsley

WHAT YOU HAVE TO DO:

Peel and chop the butternut squash, cut into cubes.

Pop onto a roasting tray, season with olive oil, salt and pepper and cinnamon.

Place in the oven at 180 degrees for 30 minutes or until soft.

Chop the onion, add to a large saucepan, cook on a medium heat until the onions are soft.

Add the butternut squash, more salt and pepper, and add the stock.

Bring to the boil, and leave to simmer for 20 minutes.

Serve on a cold, dark night, add a drizzle of cream and a sprinkling of fresh parsley.
